With Summer coming up, I am trying to find inspiration for new and exciting meals. I came across a recipe not so long ago, but could not find the link again, so I threw a salad together and winged it with this tasty chicken recipe! and it only took 30 minutes!
The outcome was absolutely delicious and I want to share it with you today!
What you need:
x4 Chicken Breast Fillets (serves 2 people)
Lemon & Herb
Spinach (fresh, uncooked)
Green, Red and Yellow Pepper
some more Pepper dews and Feta
- If you are feeding hungry tummies, you can add a bowl of steamed vegetables (I made carrots, potatoes, butternut, cauliflower, broccoli, and sweet corn – steamed in the microwave, mixed together with Ina Paarman vegetable spice and a side of Ina Paarman Cheesy Jalapeño Sauce)
- Prepare the chicken breast fillets by cutting an opening down the middle, stuff it with the pepper dews and Feta, add some Robertson’s Chicken spice, a touch of Lemon and herb spice and some Rosemary. Fry in a drop of Olive Oil.
- For the Salad, I added all the ingredients, dribbled with Balsamic vinegar and Ina Paarman’s Lime & Coriander dressing.
- Place the chicken breasts on top of the bed of Salad and serve with a glass (or two) of wine! 🙂
